This book contains the most delicious recipes to prepare jams, jellies and chutneys at home. Jams are the result of boiling fruits with sugar to achieve a rather thick product. Jellies, on the other hand, are gelled mixtures of fruit juices and sugar, usually boiled together with their seeds because of the pectin they provide, which helps them to take on a gelatinous consistency. Lastly, chutneys are a sort of sweet-and-sour and spicy jam of oriental origin, wherein fruits are mixed with various spices, and to which vinegar or lemon has been added for an attractive acidic touch.
