El mar Mediterraneo existe, pero la llamada mediterraneidad es mas un proyecto que un concepto acunado. Una cosa es contemplar el mar desde las orillas del Magreb y otra muy distinta hacerlo desde Marsella, Genova o Barcelona. Pero en la necesidad de clasificar las cocinas de Espana, la relacion entre los fogones de Cataluna, Baleares y Valencia es evidente, tanto por un marco geoproductivo bastante comun, por los sustratos historico-culturales compartidos, como por la importante presencia del pescado en la alimentacion general basica. El adjetivo > vendria e sintetizar toda esta red de relaciones. / The Mediterranean Sea exists, but the so-called Mediterranean's is more a project than a minted concept. But in the need of classify the cuisine of Spain, the relationship between the burners of Catalonia, the Balearic Islands and Valencia is obvious, due to the geography-production areas as well as the history of the region, and the important presence of seafood in all dishes. The adjective ""Mediterranean"" is applicable to reunite all of these common relationships.
